This compact dough sheeter, designed and made in Japan, is an amazing, compact machine for making laminated dough a doddle. Laminated dough is what is used in making croissants and similar viennoiserie. The neat machine can also be used to roll pastry or pasta and, being made from stainless steel, it is washable. A significant advantage of this machine is that the dough can be rolled and kept cold, making it more controllable and quicker to make. Be sure to choose the board you would like - standard or heavy-duty.

The machine is operated by putting the dough on the roller board, one side of the machine. Turning the handle of the machine pulls the dough through the rollers. For croissants, the dough is then folded and rolled back the other way and repeated until the dough has as many laminations are required.

The RS101 has a clever 2-control adjustment system, one for the coarse and one for the fine adjustment:

  • Coarse adjustment, steps of 2.5mm from 5mm up to 17.5mm
  • Fine adjustment, steps of 1mm from 0mm to 5mm.
  • This allows for any thickness from 2.5mm to 17mm in 1mm increments.
