Molino Bongermino organic and stoneground buckwheat flour comes from a plant unrelated to wheat but actually related to rhubarb, knotweed and sorrel. This pseudocereal is high in starch which means it can be cooked or milled like a cereal.

Buckwheat, known in France as blé noir or black wheat, is a fast-growing annual and may be grown in low-fertility, unfertilised soil. The resultant flour may be used in pancakes, crêpes or, in Brittany in France, in galettes. In Japan, buckwheat is used to make noodles.
