Molino Bongermino Rimacinata Durum wheat "Senatore Cappelli" semola is a roller-milled, fine re-milled semolina grown from a very old form of durum wheat (Semola is remilled, or very fine semolina). Predating modern cereal selection techniques, relying instead of old-fashioned cereal development, this variety has lower protein (and therefore gluten) and sugars, so better for pasta than the modern varieties. Further, Senatore Cappelli semolina has more flavonoids and antioxidants for more complex flavours and a wider range of nutrients.

Make your own semolina pasta with Senatore Cappelli flour using a 2:1 ratio of this flour : water with a pinch of salt. For example, use 300g Senatore Cappelli, 150g water and a pinch of salt.
