Molino Bongermino Rimacinata Durum wheat semolina is a powder-fine semolina flour from the very strong and yellow Durum wheat. "Rimacinata" is Italian for re-milled, that is, semolina is usually quite gritty so Rimacinata has been milled further to make it really fine making it the best for pasta made only with this flour, water and salt. Like the usual semolina flour, it is also very good for bread including sourdough.
