Molino Bongermino Organic Semolina "Senatore Cappelli"-25kg

Molino Bongermino organic Durum wheat "Senatore Cappelli" semola is a roller-milled, fine semolina grown from a very old form of durum wheat. Predating modern cereal selection techniques, relying instead of old-fashioned cereal development, this variety has lower protein (and therefore gluten) and sugars, so better for pasta than the modern varieties. Further, Senatore Cappelli semola has more flavonoids and antioxidants for more complex flavours and a wider range of nutrients. This is a 25kg sack.

Semola is finer than semolina for a smoother pasta (semola rimacinata is even finer). Make your own semola pasta with Senatore Cappelli flour using a 2:1 ratio of this flour : water with a pinch of salt. For example, use 300g Senatore Cappelli, 150g water and a pinch of salt.
