Emmer (T. turgidum subsp. dicoccum) is an ancient wheat grain growing wild in the Fertile Crescent region of the Middle East and has been cultivated for thousands of years.

Known as farro in Italy and shippon in Ancient Israel, Emmer was domesticated in the Southern Fertile Crescent and cultivated in ancient times throughout the Middle East and Old Europe. Emmer wheat is rich in fibre, protein, minerals, carotenoids, antioxidant compounds and vitamins, is ideal for vegetarians or for anyone simply wanting a plant-based high-quality protein source. It has a deliciously nutty flavour and can be eaten as a whole grain (farro) or ground into flour.
