Dried Sourdough Starter (Wheat)
Sourdough "starter", "leaven", "levain" or "mother" is a flour-based mix containing wild yeasts that give sourdough bread its distinctive, sophisticated flavour. This is our own dried from of our wheat starter made with organic Mulino Marino "00" Soffiata wheat flour to make a really vigorous starter once you have rehydrated it.
Full rehydration and care instructions are printed on the packet which contains 50g starter (plenty for rehydration). Once rehydrated and properly cared for, your starter will last indefinitely.

Errata: the first mix should read 50g flour, the starter and 120g water to make a waffle batter-like mixture. Subsequent mixes should be 40g flour and 50g water - again, waffle-batter consistency.
