An amazing piece of equipment from Victoria, the round, cast-iron Dutch Oven is ideal for baking the perfect 1kg boule (round) loaf as it absorbs heat from the oven to then radiate it evenly to the dough within. The dough is placed on the pre-heated shallow part which gives easy access for dough scoring and is safer than trying to lower dough into a deep pan, the loaf can be given a quick spray of water or a few ice-cubes popped in before the lid is placed over the top and then all is slid into the oven to bake in an evenly-heated steamy environment - this is what gives an even rise, with a mouth-watering rich, crackly crust.
The round Dutch oven is multi-functional too: the shallow base can be used as a grill pan which is suitable for hob, open fire or oven cooking, used the other way up, the Dutch Oven becomes a high performing casserole. Victoria Cookware is beautifully engineered with a naturally seasoned finish that is the perfect non-stick surface (no PTFE or PFOA here).
The handles are well positioned to make it easy to hold with oven gloves and overall, it measures 34cm long (including handles), 27cm wide and 16.4cm high, weighing 7.7kg. For bread, a high temperature is desirable, get your oven to about 250C (you may want a thermometer to verify this as most ovens are wildly inaccurate).
