Merchants Mill Flour
Merchants Mill was formed in London in 2022 by Daniel and Francesco. After a grand total of 16 years of experience being merchants in the organic grains industry we figured it was time we stepped up the food-chain ladder and started producing our own flour under our own label, and that's how Merchants Mill was born!
Based in Woolwich Arsenal, our micro-mill grinds and packs organic fresh flour daily, so that we can supply bakers and shops in London at the ready. Merchants Mill produces only organic flour - each bag has its own Trace2Origin code so that you can find out exactly where the grain was grown.
Merchants Mill was formed in London in 2022 by Daniel and Francesco. After a grand total of 16 years of experience being merchants in the organic grains industry we figured it was time we stepped up the food-chain ladder and started producing our own flour under our own label. Easier said than done, it took us more than 6 months to find a suitable location where to build our mill, and in typical London fashion we set up base in a small warehouse facing the river Thames.
That was just the start. Having the mill equipment delivered and built over the course of two lockdowns slowed us down but afforded us the time to research the best quality grains, talk to local bakers about their favourite flour specifics, and fine-tune our milling skills, which gave us the confidence to hit the ground running once everything was finally ready to go...And just like that, in January 2023, the first batch of London stone-milled organic flour left our Woolwich mill to end up in a local baker’s mixer!

Being the only active organic certified stone-mill in central London, we are in the perfect position to deliver our flour to a multitude of shops and bakeries as it comes out of our mill, so that no nutrients and flavour are lost along the way.
At the core of our business is our passion and experience in finding the highest quality organic grains, be it wheat, rye, or our favourite: spelt. Our favourite local farmers supply us with some incredibly tasty British grown spelt and rye, while our wheat is of European origin, predominantly from France (turns out they know a thing or two on how to grow the most perfect golden wheat grains).
