Agrano Bioreal Organic fresh yeast in a handy 42g cube, this yeast has been made to the very highest standards, without chemical additives and all ingredients are guaranteed to be non-GMO.

Selected yeast strains are cultured in a medium of organic grain and clean spring water at Agrano's laboratory in Germany. All microorganisms and raw materials used are guaranteed to be GMO-free in accordance with EC Directive 834/2007. No chemical additives are used during the fermentation process and pure organic sunflower oil is used as an anti-foaming agent. There is no need to wash BIOREAL® organic yeast in production saving resources. Steam is used for sterilisation, rendering disinfectant unnecessary.

In our own tests, we found that the fresh yeast should be used in the same quantities as the non-organic fresh (compressed) yeast (between 10-15g for 500g flour), or twice the weight of dried yeast, (not 1 42g cube for 500g flour as the manufacturer suggests). The flavour is significantly better than the non-organic variety which is designed purely for fast fermentation rather than developed flavour.

Application: Use in the same way as non-organic fresh yeast, for best results, dissolve in the liquid at around 28C. Note that organic yeast does NOT contain foaming agents and so will not foam in sugar + water in the way non-organic yeasts do.

Storage: Fresh yeast has a fairly short shelf-life, but never less than 7 days on delivery.

Keep the unused yeast in your fridge: it should not be frozen.

Suitable for: vegetarians and vegans. Certified kosher.

Ingredients: Water soluble, food-grade, organic grain-fed yeast (Saccharomyces cerevisiae). Possible traces of cereals containing gluten (wheat, rye, barley, oat, spelt, durum or hybrid strains thereof).

Note: this yeast is considered to be a mono-ingredient since all the cereal fed to grow the yeast are metabolised leaving only yeast and nothing else.

Delivery: To ensure the yeast arrives in the best possible condition, if your order is scheduled to be packed on a Friday, we will hold your order until Monday (unless Saturday Guaranteed is chosen) so that the yeast spends as little time in transit to you as possible.

Note: We can ship the yeast overseas (except EU), but this is not recommended and if you do order for delivery outside the UK this will be entirely at your own risk.

Danish-Style Rye Bread

Danish Rye Bread on a platter upon which is a rye loaf and slices
My Danish-Style Rye bread recipe comes from my 22 years living in Copenhagen, where people either bake or buy rye bread for their family every week. Indeed, most Scandinavians eat rye bread daily and the Danes are no exception. Similarly to crispbread (like Ryvita), everyone from little kids to burly men eat what looks like dainty slices of rye bread for their lunch. It wasn’t until I tried ... Read more

Marvellous Malt Loaf, sticky, malty and easy

Marvellous Malt Loaf sliced on a plate
I've always loved malt loaf: the bought stuff, but only because I've never been able to make one that comes close to that moist malty consistency that just needs some butter on it for a delicious snack.... Until now! With help from our friends at Muntons, we've got an easy recipe that makes a marvellous malt loaf. The secret to the rich, malty flavour and colour is to use a little roasted barley ...
