Ingredients
Cream mixture
25g double cream
25g pure icing sugar
Butter mixture
50g unsalted butter, softened
50g pure icing sugar
100g full-fat cream cheese
0.5g either one of BakeryBits range of extracts, or our Madagascan Whole Pod Vanilla Powder
Whether for Easter, a birthday, or just a delicious cake for everyday, this smooth extra light frosting will be a great finish for you best cakes.
Method
1. For the cream mixture, gently stir together the cream and the icing sugar until smooth, then leave to one side. Don't whisk it, it should remain liquid.
2. Beat together the butter and sugar until light and fluffy. Then beat in the cream cheese. Flavour either with vanilla (powder is best) or lemon zest, no liquid.
3. Then pour in the cream mixture and beat until thick (don’t over-beat).
