Matthews Heritage Bibury Barley Flour 1.5kg
Disappointing, in my hands at least. Straight barley flour makes a very interesting adjunct in a bread recipe but unfortunately does not seem to be readily available. Barley also tends to give the crumb a greyish tint, but that is a cosmetic drawback I am happy to tolerate for the flavour benefit.
The barley flour in this mix does bring in the characteristic barley taste, and colour, but the fairly high proportion of barley flakes it also contains added nothing to the flavour and introduced a prominent hard (not, as advertised, crunchy) texture which was not at all pleasant. My trial batch had my usual total fermentation time of around 6 hours, so perhaps the 12-14 hours pre-fermentation refrigerated dough storage the makers suggest would give more hydration of the flaked grain and a better result; but my feeling from this preliminary trial is that the likely result doesn't justify such a specialised process - even if our 'fridge had the necessary spare capacity - and that a small addition of straight barley flour to any basic recipe would give a result much more to my taste.

We eat organic. When I became sensitive to wheat, I turned to gluten free bread - but that isn't organic. French bread seemed to affect me less. (French wheat flour is apparently softer than UK wheat flour.) My husband makes his own bread. It was wonderful therefore to discover an organic French bread flour I can tolerate, that is on sale in the UK. So he now makes my bread too!

Marriage's Finest Strong White Bread flour
As usual there were a number of small lumps of flour in each package. Trying to remove them was quite challenging and adversely affected the quality of the bread I was making.
On a separate matter, although I ordered 6 bags, only 5 were sent. After contacting Bakery Bits the remaining bag was sent but it was a hassle.
