The Priors White Spelt Flour from Foster's Mill is dressed from wholemeal spelt. Like the white flour, it is dressed using a reel type flour dresser with an extraction of around 65% which ensures that some of the wheat germ is incorporated into the white flour. Spelt flour is expensive because the cleaning process making the grain suitable for milling (the de-hulling process) wastes around 1/4 of the crop. This combined with the fact Spelt is a low yielding grain means the farm gate price for the wheat is much higher than conventional varieties of wheat.

Spelt flour has a lovely nutty flavour and a higher oil content than other varieties of wheat. Yeast tends to react more quickly with the enzymes in the flour leading to larger pockets of air which, if they burst can lead to deflated loaves, a phenomenon known as bakers tunnel.
