Croakham Farm summer honey has a light floral flavour and is produced by our own bees at using non-intensive, traditional methods: our honey is spun from the comb - none of the heating or blending typically seen in large-scale production which means that this honey is, bar some filtering, as the bees produced it.
Our bees make summer honey the nectar collected from the wide range of flowers found in the gardens, hedges and fields of the East Devon countryside.
All honeys will start to crystallise after a time as some of the sugars come out of solution. This is perfectly normal and the rate this happens varies with the ratio of glucose to fructose, which in turn depends upon the types of nectar which were collected. If you wish to clear a crystallising honey simply warm the open jar in a microwave or in a pan of hot water - although many prefer the creamy nature of this honey.
