Aroma Panettone is made only from high quality Italian fruits and contains no bulking agents, and consequently is very strong and only needs to be used sparingly.
Did you know that it takes 400kg of citrus peels to make just 2 litres of this essential oil? The peels are are cold pressed and the resultant liquid is then centrifuged (spun) to separate the essential oils and juice. There is about 2 litres of essential oil and 280 litres of concentrate which then goes to be used in other foods such as soft drinks.
Bakery expert Dan Lepard describes it as...
"Aroma di Panettone contains fiori di sicilia but adds with it more flavours and aromas suited specifically to panettone dough - like candied fruit, vanilla, honey and spices - so that the quantity of those ingredients can be kept lower. This isn’t done specifically for cost, but also because these ingredients can slow or even stop the fermentation and so need to be kept to a minimum in yeast dough. By adding essential oils that contain these flavours the texture of the panettone crumb will stay very light and open."
