The Prior's White Flour from Foster's Mill is made from organic English Amaretto wheat to ensure a protein level of 12.6%. Milled at around 16% moisture using horizontal mill stones, the flour is soft with a lovely nutty flavour. It is dressed using a traditional reel type flour dresser with an extraction of around 65% giving the flour a golden colour with a small amount of wheat germ included in the flour which adds to the flavour.
White flour is produced by sieving wholemeal through a fine nylon cloth using a traditional reel dressing machine. This can lead to variable amounts of wheat germ in the white flour creating a darker colour than rollermilled flour.
