Description 

The oblong covered baker traps the steam and maintains an even baking temperature to give you moist bread with a golden, even and crackly crust and light crumb.

The baker measures (L x W x H) 37cm x 14cm x 16.5cm (14.5"x5.5"x7") giving plenty of room for a 1kg loaf while fitting on your oven shelf.

Based on ancient Greek and Roman baking traditions, the baker is made from Superstone®, a natural stoneware, fired at over 1000°C. It is oven and freezer proof and is easy to clean, requiring only to be soaked in warm water so that any baked on food may be scraped off.

Dreadnought class baker
I got this as a surprise Christmas present, and the first thing I have to say that the packaging was superb. The dispatch box was huge and crammed with loads of cardboard wadding to protect the contents. There is always a worry that ceramics or glassware will be damaged in transit, but this would have survived the clumsiest courier. Now onto the bakeware itself. As the title suggests, it is certainly not dainty and can hold a full 1kg of dough. I have now baked 6 loaves in it and despite being a novice to sourdough bread making, these have all turned out well with great crust and good oven rise. The main advantage, as with L a Cloche, is that you don't need to faff around with baking stones and pans of water/sprayguns to get a good crusty loaf. I realise, of course, that is part of the fun for some people! I followed the rather skimpy instructions in the box, letting the dough prove in the bottom half of the container, then sealing with the lid before putting into a pre-heated oven. I take the lid off 10 minutes before the end to get the top of the loaf brown. Quite a few folks on the internet swear by pre-heating the baker before putting in the proved dough. However this requires a separate proving basket, then tipping the dough into a blinking hot piece of bakeware. I am not sure it is worth the bother (or danger). Pros, ease of use, great results. Cons, size, making it awkward to handle and to store. I recommend not having any oven shelves sitting above the container when you use it, to allow easy access to the lid. Lining the bottom part with baking parchment also makes it much easier to get the loaf out after baking. Overall, very happy with it and looking forward to many loaves to come.
