Description 

Spraymalt Light is a dried malt extract (DME) from Muntons, supplied in a 500g pouch. It is made from the finest 2-row barley, and is an excellent sugar replacement for those that would like to avoid refined sugars. This light malt extract gives a lovely subtle malty flavour in buns and cakes. Of course, there is plenty of scope for experimentation! Dried malt extract is used in American-style milk shakes, or "malts". It works well in milk drinks - try a spoonful added to a flavoured milkshake for an enhanced fruity flavour.

Spraymalts are fine powder dried malt extracts. Drying is achieved by the use of a spray-drier, a process which produces particularly uniform powders both in terms of particle size and flavour. Spraymalts offer several benefits: a rich malty flavour, a natural colouring medium, a valuable source of fermentable sugars and may be used to replace liquid extracts.

DME
I really love this product. I add it to all my breads and to my pastries for color and sweet taste and it make some special aroma. negative property of this product- this is very hygroscopic powder. It must be stored in a very good closed jar.

Great for milkshakes
We add it as is to milkshakes. It adds a nice flavour. Perfect !!!

My favourite of these products
I use this quite often in milk toast breads and any of the recipes in The HandMade loaf which call for a small quantity of malt. It seems to work well and on doughs which ferment for a long time gives the yeast or leaven a little extra to keep them going. It doesn't change the texture of the bread and gives a light sweetness to the crust and improves the crust colour. Make sure to keep it super airtight as it will pick up moisture from the air and clump if allowed to get damp.
